The UF Flavor Center is composed of a comprehensive infrastructure designed to optimize breeding and selection against consumer preference, using the most powerful tools in analytical biochemistry and molecular biology. The existing pipeline provides an means to accelerate the development of any plant product around the central quality of taste.
