The activities of the UF Flavor Center are unique because they begin and end with the consumer.  Breeding and experimental objectives are informed and guided by survey and preference, a process we refer to as Consumer-Assisted Selection.  This top-down strategy ensures that all research activities are properly targeted and focused on a the most critical end point- satisfying consumer demands.

UF Flavor Center experimental objectives begin with scientific evaluation of consumer preference.  Here in the laboratory of Dr. Charlie Sims a diverse UF student and staff population logs their opinions concerning flavor of subject materials. Left: Students in separate stations evaluating a given product. Center: Red light masks color differences that may influence flavor perception. Right:  A UF student evaluates several blind samples and enters her sensory experience into the flavor database.

A diagram of this process is presented below and outlines the course of UF Flavor Center activities and a timeline for our deliverables.
